Question about my sprout patties.

Hi All!!

I don't believe I've asked this question as of yet but I am just curious. I eat

my various sprouts in my salads every day. And when I go out to breakfast, I

bring a little pack of my sprouts and I add it to my breakfast sandwich and I'm

all set.

So here's my question. Every so often, I take my vegetables that I have cooked

the night before (it could be broccoli, zucchini, carrots, ANYTHING I HAVE IN

THE HOUSE), and I put them in my food processor, and I add some egg whites (or

an egg if I wish), and some breadcrumbs, and a chopped onion, and I always throw

in a big handful of my broccoli/radish sprouts. I mix it all together and I

make patties out of them.

I put a bit of vegetable oil (or sometimes I just use my PAM) for no stick.

I then cook them and turn the over until they are nice and crisp, and I drain

them very well. I put my home-made plain yogurt on top and believe me, this is

a heavenly dish. My hubbie LOVES these patties.

I'm just wondering if I am losing any of the nutrition of the sprouts because I

am cooking them.

I'm not worried about this because I eat raw sprouts with absolutely every meal,

so I'm feeling just fine in that department.

But am I getting any nutrition whatsoever out of the sprouts in my patties, and

am I still getting the anti-oxidant benefits??? Or are they all lost because

they are heated. I use a low to medium flame and cook about 10 minutes.

Thanks to anyone who can tell me.

Regards.

Melody
