Guest guest Posted December 16, 2005 Report Share Posted December 16, 2005 My dream came true - and I finally have all the peppers I ever wanted (except, perhaps, black pepper absolute): Pink, Green and White! I got the pink from Aftelier - it's an absolute, fresh and slightly fruity, and somehow smells like a perfect aphrodisiac. I haven't worked with it yet, but it has a lot of potential to add a vibrant unusualy spicy edge to florals and orientals. It has some fruity berry like quality to it too, although this might be just because it's pink! The green pepper is almost citrus or piney, but not quite. It's sharp and spicy but more on the cool side (where as the black is warm and dry). I envision it in a green and citrus perfume, adding an unusual sparkle to the top. The White Pepper is perhaps my most favourite of all the three stages of ripeness from this species (I love Pink Pepper the most of all pepers though). It is surprisingly soft, sweet and almost floral. I think it will be gorgeous with tuberose and in white florals! Though all are different version of the same thing - they are quite different. At the same time, I think if I won't be able to source them out I could fall back on the widely available black pepper. Nothing could substitute pink pepper though - it's very different. The white and green I got from New Direction Aromatics. It's the first time I ordered from them, and I am overall happy with the service (except for the fact that their " sample size " is 5ml, and when I asked for samples things got complicated as you may imagine - I didn't want to pay $120 for a sample of champaca, so I decided to skip the whole " sample " thing, and wait to see what is the quality of what I ordered before taking any more risks.
