Guest guest Posted January 8, 2009 Report Share Posted January 8, 2009 Lentil Salad Serves 4 1 cup raw germinated lentils (soaked for 8-12 hours) 1 chopped white onion 1 tomato, chopped 1 cucumber, chopped 2 tablespoons Udo's Choice oil (this is an oil with lots of EFAs. If you can't find it, substitute another oil of your choice, such as flax oil or more olive oil. I just leave the Udo's Choice oil out when I make this) 2 tablespoons cold-pressed extra-virgin olive oil 2 tablespoons raw apple cider vinegar (optional) Sea salt, to taste (I use 1 teaspoon) ¼ lemon (optional) Mix the germinated lentils, onion, optional tomato, and cucumber in a medium bowl. Pour the oils and vinegar over the lentil salad and toss well. Season with sea salt and a squeeze of lemon. Toss again. Let sit for 2 to 3 hours in the refrigerator to absorb the nice onion flavor. I do exactly the same thing but I just add my sprouts. And I never heard of UDO'S CHOICE OIL. I must look into this. Not after you sprout them?? Yes, they are only germinated, not sprouted. So you soak them 8-12 hours, drain and rinse them, and then mix upt he salad right then. It probably wouldn't hurt the salad if you sprouted them a little bit (like 1/4 inch tails) but the salad is great with the lentils just germinated. > I do exactly the same thing but I just add my sprouts.
