Some of the better organic companies may also soak their beans before milk production because that's the only way to naturally remove the bitter taste. In China they probably only eat it as tofu or beans, more moderately and as a whole food. So it is not surprising that we who don't really know how much of it we are eating, unless we watch carefully, have developed sensitivity or an allergy to it. I suspect the problems with soy originated when 'they' decided to start isolating certain components and calling those components " good for us, usable protein, meat substitute, etc " , whether for hormone supplement sold for PMS and menopause, or a protein drink or a fake burger patty. Now I have heard there is the 'estrogen' factor in regard to soy products and woman who have had breast cancer are being advised to stay away from soy products. There are so many factors as to the cause of a dis-ease, soy may be getting a bad rap. They resultingly have numbers of soy foods that contain little to no growth inhibitors. Some of China's great fermented soy products are miso, nato, fermented tofu, and soymilk from fermented beans. I luv nato! For my protien I enjoy wild and organic meats (like deer and buffalo). They're the only meats I'm willing to eat because they're very healthy for the body and environment. Also one of humanity's oldest forms of energy and protien is spirulina (blue-green algae). Spirulina provides all the required amino acids, and in a form that is five times easier to digest than meat or soy protein. I actually only researched it recently and just sent out for my first try of it. But my husband's tried it before and he loves it. We are not aware of how much of _______ we are getting in our systems when we eat foods that are processed, unless we read the labels and even then... Plain old tofu or its fermented products in balance with everything else, even venison or ostrich, what ever helps us feel better is the key I suppose, unless one is more devoted to the philosophy of the eating lifestyle rather than to the individual appropriateness of it. There is the issue of portion control too. In this country of abundance for many, our meal size has increased dramatically over the years resulting in the mantra " I'm stuffed! " , a phrase not longer reserved to post-Thanksgiving groans. Oh, we are a funny lot, we humans. He told us if we used the right types, it would take on the flavor of anything we cooked. It was used as filler to expand meals to feed more. Yes, they do process soy and make it safe to eat and I think that is the problem here with the items being sold. Also, food producers don't want us making our own food or buying cheaper from others because they loose money, so they try scaring us into buying only theirs. However, since I have been eating huge amounts of sprouts I find I don't need the algae or vitamins or any other supplements. I prefer to eat rather than take supplements and sprouts are the cheapest and most nutritious thing on earth!! Of course, I don't eat much of any junk food either or sugar, so my system doesn't have to work twice as hard to stay healthy! Not only that, it is in a form that the body can easily digest and it won't pull calcium from your bones to regulate your blood ph since veggies come with calcium and other minerals needed and animal protein does not. That's why Americans have a big problem with osteoporosis. They eat too much animal protein! I have a history of osteoporosis in my family and I'm also only 5'1 " and was eating a lot of meat and dairy some years back (up until I changed my diet 8 years ago). After a bone scan at age 56 it was discovered that I had osteopenia in the upper portion of my body and the doctor wanted to put me on some drug for it. Since I had just changed my diet and was reading a lot about nutrition, I refused and said I'd wait and see how things go after a year or two. He was not happy with me but agreed to let me try since " we caught it early! " The only change I made was I added weights to my arms while doing aerobics. I continued my new whole foods vegan diet and went to aerobics 3x a week plus started yoga. LOL! That was 7 years ago. I have no fear of ever getting osteoporosis! Just because there is a history of breast cancer and osteoporosis in my family doesn't mean I have to get it too! I don't need meds (that always have side effects), I just need to continue to eat nutritious meals, exercise and deal with stress via yoga and meditation. Not as easy as popping a pill, but a whole lot more enjoyable when I at 63 I feel 20 years younger and have no health problems. I love hearing stories like yours because it gives me so much more confidence in my own holistic approach towards living my life. It is amazing how much younger you can feel when you cut out the additives and unwholesomeness from your diet... For a long time now I've known that non-organic cheese isn't that healthy.. unfortunately it's always been my #1 favorite food-the first favorite meal of mine I can remember is macaroni & cheese.. because of the cheese . So I casually brushed the growth-hormones and stuff aside by convincing myself there must only be such " trace " amounts of it that I'll be ok.. This was my logic since organic cheese has been too expensive the past few years. And only a few days ago I was reading about the junk that goes into non-organic dairies and something clicked in my brain... Giving up my fav food was an opportunity in a tragedy though because I have been drinking whole organic milk. And tonight (as funny as this must sound) I was literally blown away by the flavor of it! It's funny because my whole life I never liked the taste of milk so naturally when I switched to organic my habit had stuck with me (I only switched a few years back when I was 21 or so). But it is so SWEET, I SWEAR it tastes like I'm drinking a sugary vanilla flavored milk! I really don't think it's a trick of the mind, but I really honestly do taste a faint hint of vanilla in it! It tastes so sweet like cream! I have never heard farmer testimonials to fresh milk before, but tonight I was raving about the taste of it and someone else said to me a lot of farmers would agree with me on fresh organic milk. I have noticed such an incredible difference though. I'm only 23 yet I felt as if I have pretty good arthritis and my mood was constantly crashing on me to horribly low levels. It's only been a few days off the cheese but I am practically arthritis free and my mood has been steadily climbing. The sadness with the attitudes of many people is that the little things you put into your body don't make a difference, but they do.. Like me saying " what's a little cheese here and there going to do to me? " But I think you (Bonnie) were really sharp on your decisions because a lot of the ills we face in such a additive-stuffed, non-organic community often simply just derive from the little things we do with our body. Friends who know about nutrition told me that I needed less protein than I thought. I was still worried so I increased my protein intake (in retrospect too high) by eating soaked nuts, sprouted grains, avocados (several daily), and......hulled hemp seed!
