It's beer! The recipe describes the original method used for fermenting grain

and that's beer. You're using the yeast spores on the wheat or from the air and

you'll have a very low alchohol content if you only let it sit for 3 days. The

fementation will also release the nutrients from the sprouts into the liquid.
