============================================HELLMANN'S (COPYCAT) MAYONNAISE Ingredients 1 egg yolks 2 1/4 teaspoons white vinegar 1 teaspoon water 1/4 teaspoon salt, plus 1/8 teaspoon salt 1/4 teaspoon granulated sugar, plus 1/8 teaspoon granulated sugar 1/4 teaspoon bottled lemon juice 1 cup soya oil ( or canola oil) DirectionsWhisk the egg yolk by hand for 15 seconds. Combine vinegar, water, salt, sugar, and lemon juice in a small bowl or glass measuring cup. Stir until salt and sugar are dissolved. Add half of this solution to the egg yolk and whisk for another 15 seconds. Pour 1 cup of canola oil (or soybean oil) into a plastic squirt bottle. This bottle will allow you to dribble the oil into the egg yolk with one hand while whisking with the Other. Squirt a few drops of oil into the yolk and whisk, and continue to add oil a little bit at a time while Whisking non-stop. When you have used about half of the oil, your mayonnaise should be very thick. Add the remaining vinegar solution. Whisk. Now you can add the remaining oil in a steady stream while whisking until all of the oil has been Added. Your mayonnaise should be thick and off-white in color. Put the mayonnaise into an old mayonnaise jar and seal it with a lid. Of course you can adapt to dietary needs, if sugar free you need to use agave , stevia etc. I would use light olive oil (better for you)===========================================Miracle Whip Imitation Blend with a stick blender in a pint jar ... 1 room temperature egg1 tsp. Dry mustard1/2 tsp. Salt2 tsp. Lemon or lime juice1 1/2 tsp. Vinegar ( either kind ) 1 pkg. Sugar Twin ( sweetener of choice ) 1 cup oil1/4 tsp. Paprika Blend and taste for sweetness and sour desire. This taste just as good as regular Miracle Whip. Note : Some like it better adding a dash of garlic powder.============================================

Please note that you can improve this recipe's nutritional value by eliminating

the soy or canola oil (its GMO and an unhealthy omega 6 oil that easily

oxidizes and goes rancid), and using instead expeller pressed sunflower oil or

extra virgin olive oil, or a combination of the 2. I personally use sunflower

oil and it tastes great!

Here is the recipe from Nourishing Traditions cookbook

1 whole egg

1 egg yolk

1 tsp Dijon type mustard ( I use dry powder)

1 1/2 tsps lemon juice

1 tblspoon whey (optional)

3/4 - 1 cup expeller pressed sunflower oil

generous pinch sea salt.

I 100% agree and never make this recipe - the original question was about mayonnaise recipes in general and I tried to just link to the existing recipes in our files, but someone asked for them to be posted. Whenever I make mayonnaise I use the recipe you posted (except sometimes I sub apple cider vinegar and a couple of drops of stevia for the lemon juice). THANKS for posting it - now I don't have to look it up and write it out - I can just link to your post for the healthy mayonnaise recipe/version! :-)
