Guest guest
Hi everyone,I wrote two weeks ago regarding a Basil Lemonade concoction that I enjoyed at a local fair. Just wanted to share my VM recipe for it! I used the VM Cookbook's "Lemon Lime Basil-ade" as my starting point, but inadvertently purchased a dry lime that didn't make it in. So I used 1 lemon, halved the recipe and adjusted to taste.Basil Cucumber LemonadeAdd the following ingredients to your container:1 seedless cucumber1 lemon: halved, peeled, and pitted1/8 cup basilabout 1 cup ice cubessugar / sugar substitute to taste. (This would really depend on your preference. Hubby likes things on the sweeter side. So I started with 3 sugar packets, realized I was getting nowhere and incorporated the sweetener Truvia until it tasted just right. I probably poured in about 1/4 cup Truvia.)Start on 1, dial it up to 10, switch to high. Use the tamper to push the ice into the blades and blend until it reaches your desired consistency. (It makes a lovely lemonade ice if that is what you are in the mood for. The longer VM runs, the more liquified the mix becomes. We settled on a frozen daiquiri / margarita consistency. It tastes like the best frozen cocktail ever minus the alcohol! Which works for us, since we don't really drink, but love the daiquiri flavor and mouthfeel.) Guest guest
There was a similar recipe in Chatelaine magazine (June edition, I think)..... they included fresh mint in their recipe...this may help to sweeten it up a bit. Guest guest
Wonderful! I just made this basil cucumber lemonade and it is great. I like it tart, so I did not add too much stevia, but put in more for my husband to love it too. Thanks for this nice refreshing drink after working in my yard today. Guest guest
Loved this so much I made it for the second time yesterday so my husband could try it.. his half sat for half an hour or so until he was finished with some yardwork.. and we were both surprised to find that in that short time the lemonade had turned bitter. I'm sure I missed a few seeds when I threw the lemon in.. but had no idea they would turn the smoothie bitter so fast. Lesson learned..!
