Chocolate Strawberry Ice Cream.. semi healthy :)

My newbie ice cream efforts are still in the 'hit or miss' stages.. I've made

a few decent ones, but more often than not I'm left unimpressed with the texture

or lack of flavor. Especially the lack of flavor. Most of the recipes call for

a lot of ice.. and I end out with ice cream that tastes like.. ice. Or I've

got ok flavor, but it's slush. And always, wa-a-ay too much for just two people

Again, I've had some successes and know I'll have more.. it's all one big

learning curve.. but that's just where I am on the curve right now. :)

Tonight though.. a definite hit. While surfing for VM ice cream, I came across

a blog with this recipe..

1-1/2 Tblsp (8 grams) Hershey’s Special Dark cocoa

1 Tblsp (4 grams) Amazing Grass Super Chocolate powder

1/3 cup non-dairy milk (I used almond milk).

2-6 ice cubes

1 bag frozen strawberries (about 250 grams)

sweetener of choice, to taste

I didn't have any Amazing Grass Super Chocolate powder (uh, hadn't heard of it

until this recipe).. so just used regular cocoa (not more of the Special Dark).

I used a mix of regular sugar (gasp!) and vanilla stevia for sweetener (still

working on getting the right sweetener and ratio there, since my husband doesn't

like the taste of stevia at all, and I won't use artificial sweeteners. And I

completely forgot to put in ice cubes.

I put everything except the strawberries in the VM and blended on variable speed

1 until the cocoa and sweetener were well mixed and dissolved (I taste-tested

here, to make sure the sweetness level was ok), then put in the strawberries and

blended on high with the tamper. It only makes about two cups, so I didn't get

the proper 'pillows' you'd get from a larger amount.. but I've got no

complaints. The result was a rich, creamy, intensely flavored

chocolate-strawberry ice cream that's made it to my 'keeper' file. I scraped

out as much as I could into a bowl with the spatula, then scooped it with an ice

cream scoop into two bowls to give it more of an 'ice cream' look..

Made two approx 1-cup servings for under 125 calories. I'm sure you've all got

your own favorite healthy cocoa powders.. and in time I'll graduate to them

too. Next time I'll try subbing raspberries...

To give credit where it's due.. this is where I found the recipe.. it's got

pictures of the finished product that I can attest are right on the mark. :)
