Hello Janet,I divided my bag of Kelp Noodles in half. I poured my "Guacamole In A Bowl" recipe over the first half and ate it that way. The second half I made a creamy sauce of coconut milk powder, coconut oil, and stevia for a sweet version. That wasn't as good (texture wise). Apparently the sauce should have lemon in it - it seems to soften the noodles some and they aren't so crunchy with lemon added and a little bit of time to sit in the sauce with lemon...The first time I tried it from the health food store they had curried kelp noodles, and spinach pesto noodles. My first attempt at using kelp noodles was a success!! They are good! Even my

husband liked it. I mixed 2 recipes Lea Ann showed me on the internet. I will

make this again.

Curry Kelp Noodle Stir Fry

½ package kelp noodles – cut into 3 inch pieces, soak 1 hour with ¼ lemon wedge

Grate: 2 carrots, 1 zucchini, 1 inch ginger

Slice very thinly: 1 celery stalk, ½ sweet onion

Greens: 4 kale leaves pulled off stem, 2 large handfuls of spinach

Turn on skillet, add ¼ cup water, heat to bubbling. (You can use oil if you

want)

Add carrots, zucchini, ginger, celery and onion and sauté 15 to 20 minutes.

Add greens and sauté until wilted.

Add drained kelp noodles. Heat a couple of minutes.

Prepare sauce.

Sauce:

1/3 cup lemon juice

¾ cup coconut milk – ½ can

1 tablespoon curry powder

¼ cup sesame seeds

½ teaspoon himalayan sea salt

½ teaspoon white pepper

pinch cayenne pepper

Add all sauce ingredients into Vitamix and blend on high a few seconds.

Add sauce to veggies and kelp noodles and heat a minute. Serve with sesame

seeds or hemp seeds on top.

Apparently not all of the ingredients that were less than one came out right.

I'm not sure why, this has never happened before.

Kelp Noodles- one half a package of kelp noodles and cut the noodles into 3 inch

pieces with kitchen scissors and soak the noodles with one quarter lemon.

Onion- Slice thinly one half onion.

Coconut milk- use three quarters cup or one half a can

salt and pepper- to taste or one half teaspoon each

THANKS for doing the legwork Janet! That recipe looks great!I'm visiting my parents in Missouri, and haven't found Kelp Noodles here yet (small, rural town) but when I get to Springfield to visit my sister, I'm going to see if they have any in the "big city" ;-)Ginny - I really enjoyed my one bag that I've eaten so far - what I especially like is that they are filling, but low carb, and low calorie!!! (Google to learn more about them - really healthy food to eat…)
