I use dates to sweeten my ice cream

I got my Vitamix and after a successful wet chop of red cabbage to make a yummy coleslaw I moved quickly onto my first batch of ice cream. Because of allergies and candida in my home it was made with coconut cream, 1/2 teaspoon stevia, 2 Tbsp pure cocoa, 1 frozen banana, 4 cups ice and I threw carrots in to impress a friend. It did not come out in four mounds and was actually very runny with some chunks of ice and carrot. I know the 1/2 cup sugar would have helped with creating the solid mounds of ice cream but how can get those results without sugar??

I never put ice cubes in ice cream or are you going for really soft stuff?

You need frozen stuff to blend it.  I freeze coconut milk in ice cube trays and that works great.  On Thu, Jul 19, 2012 at 4:30 PM, Terry Pogue <tpogue@...> wrote:

That is what I used in my Piña Colada Ice Cream, but only about 1/4 cup and the rest is the 2 cups of refroze pineapple. It's real ice cream tho. You have to eat it with a spoon. Unless you let it thaw like any ice cream. Sent from my iPadHDOn Jul 19, 2012, at 9:41 PM, Kimble <nkimble@...> wrote:
