Guest guest
---What about those denatured before they get to our stomach? And I didn't mention in my last post before denaturation zwitterion proteins have a positive or negative charge depending on the pH of the solution they're in. And upon denaturation they become neutral. This is of significance but I don't know of what significance. Oh ya, biochemical significance. Has to do with bonding, etc. It's much more than just unraveling a wadded up ball of yarn or whatever.
