In fact they are *more* nutritious when cooked, as the breaking down of oxalates frees up minerals. Cooking an apple is similar to soaking a grain. They are absolutely delicious lightly fried with butter, cinamin, nutmeg, and a little bit of sweetener. I also think there is some sort of irritant in apples, as I know a few people, including myself, that get reactions to them when raw, but never when cooked. Apples are not high in enzymes, so the benefit of eating them raw is small and is probably outweighed by the oxalate issue if you have a high need for calcium.
