ORAC measures the abilitity of a substance to absorb oxygen free radicals. anyway, the herbs with the highest ORAC rating were Italian oregano followed by Greek mountain oregano. hmm...Mediterranean herbs that are probably regularly consumed by the Mediterranean population. IF these are widely and regularly consumed by these mediterranean countries, which i believe they are, then folks there are getting a good dose of antioxidants. one of the more recent theories of the cause heart disease is that oxidized cholesterol plays a role. IF that's the case, then Mediterranean folk might have extra protection from oxidized cholesterol by the high antioxidant herbs they consume. just my mind meandering...but it irks me that so many variables are simply not taken into account when " researchers " conduct such studies with seeming blinders on to everything but the usual suspects of cholesterol and saturated fat.
