I'm not sure about the substitutions for sugar if you wanted to do that. But anyway, here is the recipe: FRENCH VANILLA ICE-CREAM 2 large eggs 3/4 cup sugar 2 cups heavy or whipping cream 1 cup milk 2 tsp. vanilla extract 1. Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream, milk, and vanilla and whisk to blend. 2. Transfer mixture to an ice-cream maker and freeze following the manufacturer's instructions. Makes 1 quart. Maybe you could find this book at the library. It has the usual strawberry, peach, chocolate chip flavors etc., plus indulgent ones like super fudge chunk, and it also has winter fruit flavors, like kiwi ice-cream and orange ice-cream. I also know there are / or were recipes on the Wilderness Family Naturals website. I have found many in the coconut oil cookbooks. I remember using raw milk and whipping cream. We used B grade maple syrup for sweetner, it had raw eggs in it. The flavor made was maple walnut. Also had real vanilla in the mix. It was great. Most of our ingredients were from MVV. So it wasn't Horrible, but it was pretty-much out of control! You are so funny. Oh, and the other day I drank a LARGE strawberry shake; Sawyer had some but not enough! What is up with me and the ice cream this week?? I just had another idea that may help me. If I knew I had to come in here and tell you guys what I just ate everytime I ate something becuz I was " craving " it and not for a meal. If I knew I had to come here and speak my sins, I bet that would help too. I'm too honest too lie, and I'd be embarassed sometimes so maybe that's something else I will vow to do..LOL.. In all acutality, I don't think my eating is " bad " , but I really would like to tweak it some and get rid of maybe 5 more pounds.. I cut up frozen fruit (if I can), add liquid stevia, vanilla and raw cream. Then I just blend it until the fruit is pureed. The frozen fruit thickens it to a soft-serve consistency. You have to remove the fruit from the blades a few times (unplug the blender first) and stir the beaker a little, but it only takes a few minutes. The nice thing is that you don't need any sugar because it isn't frozen hard. I freeze bananas past their peak and use them, too. I suppose you could use part milk and add egg yolk as well. If I make a mint or chocolate, I'll USUALLY reduce to 1+ cups of cream and use more whole milk. I'll also usually drop down to 2 eggs & 2 yokes. Generally taste better a little lighter. Sweetner is usually rapadura but, for example in maple walnut I use 3/4 cup of maple syrup, or in banana peanut butter I use raw honey. The milk I'm using is cow. I've had some flops and have some favs. that everyone oooohs and ahhs over. Obviously this is ice cream (sugar which should probably be a four letter word!!!!!!!!!!!) but, it's less damaging then store bought and DELICIOUS! Be creative and have fun! Also, when making the base start with the eggs & whip them up for a good couple minutes, then add the sweetner/whey and whip that thoroughly. Last add your dairy and flavorings (extracts, liquors, p. butter, etc.) and only whip a little (don't want too much air in your finished product) or your ice cream maker will overflow and the texture won't be as creamy. Fruits, chocolate chunks, nuts, etc. get added to the ice cream just a couple minutes before it's ready to come out of the ice cream maker. This is the way I did mine and it was fabulous. As creamy and as good as any premium Ice Cream on the market and almost as good as my custard based ice cream that I churn. So into the Vitamix I put just enough cream to come up but below the blade, maybe 1/3 cup. Into that I put 1/2 cup of sugar and 3/4 teaspoon of Xanthan Gum. I gave it a little whirl to dissolve the sugar a bit. Then I put 2 cups of frozen whole strawberries in. Turned it on and gave it some pushes with the plunger. , my husband was so impressed and so was I. I have a feeling that I might even be able to freeze it and not have it go brick hard. I think next time I'll cut back just a bit on the Xanthan Gum. But the texture is almost perfect. wants me to do a peach or even a chocolate banana ice cream.
