I just freeze chunks of watermelon and mix with unfrozen watermelon in the Vitamix. (about one cup of unfrozen then enough frozen chunks of watermelon to reach the 4 cup line in the Vitamix… I like simple, but you could also add mint leaves to this to bump up the flavor. I do the same thing with carrot juice (mixing frozen carrot juice ice cubes with carrot juice) for a carrot juice sorbet!
