The vitamix reduces it to the consistency of the berries or fruit and we don't notice it at all. But 2 lbs at a time...probably too much at one time I would guess. How did it taste?The fan does not kick on to cool the motor on the variable speeds so that is why the motor over heated. You can use the variable speeds to chop as long as the "load" isn't too much. A possibility (something to try) might be to pulse on high. You will get a finer grind, but it should work (in theory at least).BTW, what did this taste like?I really LOLed at the "auto-correct" error in this comment on the recipe:"This is awesome chopped liver. I think I probably should have added a bit more salt and pepper but otherwise I was happy with it. In the past I have used my food procssor on a low speed.
