According to a cooking pal of mine it will need the Xanthan Gum or it will be

rock hard. That's okay since I plan on using it in combination with frozen fruit

to enrich the fruit ice creams.

Like I said playing around. That's the fun isn't it.

By the way, I have made this a couple of times now and since It didn't need the

Xanthan Gum I didn't bother. It's a tad bit harder than normal store bought ice

cream but not so hard that I couldn't enjoy it after it had been out of the

freezer for about 15 minutes. To be honest with you the second time I made it I

totally forgot about the Xanthan Gum. I'm out of it now so I'll try and remember

to make some tomorrow and I'll use the XG and see how I like the difference.
