That's okay since I plan on using it in combination with frozen fruit to enrich the fruit ice creams. Like I said playing around. It's a tad bit harder than normal store bought ice cream but not so hard that I couldn't enjoy it after it had been out of the freezer for about 15 minutes. To be honest with you the second time I made it I totally forgot about the Xanthan Gum.
