I read a specific warning about putting herbs in oils in a book about using

herbs various ways. It said leaving fresh or dried herbs in oil was

dangerous. It suggested even for home use to not even keep it in oil in

refrigerator for more than a couple of days. should only be done carefully

as anything botanical in an oil would rot. said putting them in vinegar was

better, but still needed to be preserved like pickles, sealed in air-tight

containers after heating.

I think you would need to use a preservative such as benzoin, or vitamin e.

I never have left mine in the bottles whole so i'm not sure.

I have done vinegar! It seems to keep well. The longer they sit the better

they get! Are you going to use them as bath vinegars?

How funny, I love vinegar, too. I would think that using vinegar would be

enough to preserve the product. Isn't is really hard to grow mold and such

in that kind of environment? In fact, I thought vinegar was used to

preserve food before chemical preservatives were available.

thanks, , I had not thought of the Vit E. That would help with

preventing oxidation of the oil, anyway. I'm really thinking, now, I need

to use dry herbs, or at least " wilted " .

Hmmm...that's interesting. I wonder if the herbal oils I see in the

stores have preservatives added? I'll have to check the labels next time.

Hello,

I make herb vinegars ALOT!!!!! One does not need to add anything to the vinegar

as it is the preservative itself. Pickles were made to preserve the cucumbers.

Vinegar was used which is what makes a pickle. (mmmmm think I will try to find

one) ;^)

A few years ago I thought of doing the same thing. Ended up making vinegars.

Still do make them. They

are so easy to make and taste great too.

They usually need one to two weeks " curing " time in a dark cupboard before

decanting into decorative bottles. You can add a fresh herb sprig to the

decorative bottle as well without having to worry about spoilage because

vinegar doesn't have that problem.

Flavored cooking oils such as olive oil however need to be refrigerated and

used quickly as the herbs will go bad and begin to grow mold. Adding Vitamin

E will not stop this process.

Given their short shelf life, many folks prefer to make herbal or fruit

infused vinegars to give as gifts rather than flavored oils because the gift

receipient may not follow your careful directions to refrigerate and could

end up with food poisoning.

There are various websites out there with info on this subject. Type

flavored oils or flavored vinegars into a search engine such as Google and

let your fingers do the walking (as they used to say).
