Let me tell you about protein pancakes. There must be thousands of recipes for these things and they all taste like egg whites with oatmeal thrown in. It's not horrible but takes some getting used to. They don't taste like pancakes at all. Take all the recipes you find and try each one until you find you like. Then stick with it. During challenge 1 I made up a whole weeks worth at a time and kept them in the fridge, then just threw them in the microwave for 45 seconds and headed out the door with them. Very easy to eat in the car. Now I alternate between cottage cheese with Kashi Good Friends or cottage cheese with a diced apple and smidgen of peanut butter. I remember I tried these about a year and a half ago, without a blender and I about gagged on them. I couldn't see what was so good about them. I believe it was after that experience I gave up on bfl before. With everyone, including Sunshine, exclaiming how great they were, I decided to try it one more time, but in the blender this time. MMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMM By the way, how many are considered a serving? I have Pampered Chef's double burner griddle, and can make up to 8-4# pancakes at a time. Please help! By the way, my family and I went outside today so I could do my cardio. I haven't run outside in years and have been feeling really conspicuous about it. We took my PC timer to count up the minutes and my dh would do pushups every time I passed and Noah was just cheering me on. Oh, this in the tennis/basketball court we have right outside behind our house (I live in military housing). Noah's learning to count on timers and I taught him to read along that chart according to the timer (Jim had to help him) and we all had a great time. It was the hardest cardio I've done so far, but I feel good now and ready to go with the day. It's much easier to exercise on the gazelle or to Zumba inside than it is to actually walk/run outside. Guest guest Posted February 19, 2004 Report Share Posted February 19, 2004 There are several different recipes but the main one I use is: 1/2 cup oatmeal blended add into blender: 1/2 cup CC 2 egg whites vanilla sweetener to taste You can vary it by adding 1/4 cup of canned pumpkin, 1/4 cup natural applesauce and a few berries. When I do this i usually add one more egg white. You can add other flavors to it also like lemon etc. This is one serving for me. My version goes: 1/2 cup oatmeal, 1/2 cup cottage cheese, 4 egg whites, 1/2 cap of vanilla extract. Liquefy it all in a blender or food processor, pour it on a hot non-stick griddle, cook it until it bubbles, flip it and cook it some more, top it with Log Cabin sugar-free maple syrup and 1/4 cup blueberries hot from the microwave. I usually make one frisbee-sized pancake that I have to cook slowly so it gets done in the middle. This recipe would probably also make 4-5 smaller pancakes if you wanted to divide it. The whole recipe is one serving. Cottage cheese and eggs are the protein, oats and berries are the carb. Sometimes I put almond or orange flavouring into it. For a while I was putting a couple of packets of sweetener in them too but they got too sweet for me.
