I'd chop the meat you want to grind into chunks and put them into the freezer for just long enough to get the outside a tad frozen, then process in small batches (no more than 2 cups at a time in a wet blade container, or up to 3 cups in a dry glade container). In your Getting Started, A Step-by-Step Guide, that should have come with your machine, on page 31 are instructions on how to grind meat. In case you don't have that book, the instructions read: 1. Prepare meat for processing. a. Cooked: cut into 2" cubes. b. Raw: partially frozen, cut into 1" cubes. NOTE: Be sure to follow safe handling procesure when processing raw meats. 1. Secure 2-part lid. Remove the lid plug. 2. Select VARIABLE speed #4 to #6; turn machine on. 3. Drop meat into the blades while machine is running and continue running until desired texture/coarseness is reached. Grind in small (one cup) batches for best results. I also have a grinder attachment for my Kitchen Aid but the food processor is easier. I just make sure the meat is VERY cold and firm. Depending on the meat I might even partially freeze it. I read somewhere that if you like rare hamburger the safest thing to do was buy a whole piece say chuck or brisket (my favorite hamburger meat is twice ground brisket) anyway, Cut the meat into chunks and dip for a minute into boiling water to kill any outside problems, then grind it. Then it's save to eat the meat rare. Husband bought a meat grinder so he could grind chicken bone and all for his precious Savannah brat--errr I mean cat. She looked at that ground meat and said no thanks give me my raw chicken leg thank you very much. So we have a meat grinder we are not using much. I should watch for sales on larger pieces of meat and do the grind ourselves and do the twice grind. We did do some (a roast) coarse ground and it made really good chili. I have not used my VM (in the more than 30 years I have owned and used one) for meat as I was afraid I would goof and make pate out of it. I do use it for cooked meat in soups though. Chop your chosen meat of choice into more manageable chunks (I.e. if you're chopping up a steak to make burgers, into about four or fives pieces). Have your VM set up with the smaller lid off (the insert bit, not the proper lid). Turn it on to about 3 or 4 or how fast for how big you want the meat to be. Then drop a chunk in. Wait for it to be ground. Turn off, tip out and repeat! Easy peasy!
