Guest guest Posted March 10, 2012 Report Share Posted March 10, 2012 Sure! 1 cup milk (skim or low fat) 1/3 cup shredded cheddar cheese (low fat) 1 cup chopped fresh or frozen broccoli (or cauliflower) steamed 1 teaspoon diced onion 1 teaspoon cornstarch 1/4 teaspoon chicken or vegetable bouillon or soup base Place all ingredients into the Vitamix, secure lid, select variable 1, increase to 10, go to high 5-6 min. I wondered about the cornstarch making it chaulky. We have found we prefer the Broccoli Cheese soup when we steam the broccoli first and use the steaming water in the soup as needed to achieve the consistency we like. Also we like the onion and garlic sauteed. Husband asks for this soup when he sees Broccoli come into the house in my shopping bag. I just reduce the water (usually the steaming liquid from whatever I am steaming, sometimes veggie stock or broth) If I want " cream " soup, I might use a bit of rice milk, but I don't thicken the soup. One favorite when I have not been to the store in a few days is the Normandy Veg mix from Costco frozen foods (baby carrots, sliced yellow carrots, broccoli, and cauliflower), steamed and made into soup. And to my astonishment the minute husband saw me bring Cauliflower into the house a couple of days ago (I had a hankering for steamed Cauliflower) he asked " you gonna make that great Cauliflower soup again? " . LOL (my Cauliflower soup recipe is based on yours ). In nearly 36 years of marriage, he has NEVER ASKED for Cauliflower though he will eat it if I get it, he does not ASK for it, until THE Barry Soup entered the picture here. Two of her family are vegetarians so I made sure I had lots of good vegetables. One Item I has was wonderful small brussels sprouts. My friend said she hated brussels sprouts but she is a good sport and decided to taste mine because they were so small and pretty. She LOVED them. She apparently had only had them over-cooked and mushy. Same was true of cauliflower. She hated it because she'd only had it over cooked. Now she loves those vegetables. Back to the on top of cauliflower soup. I like a three cheese soup. After making it (in the Vitamix) with some really great home made chicken stock and it's thick and nice and steamy hot I add Cheddar cheese (shredded) and stir that around so that it melts. One other cheese. I'll have to look up the recipe I don't remember offhand but the cap is you sprinkle bits of really creamy good Blue Cheese on top. Like you said, most are jaded by some mushy, overcooked thing they have had dumped on a plate in their childhood. To say you don't like vegetables is like saying you don't like colors-there are just too many to NOT like them ALL! I am fortunate that vegetables were always my favorite part of meals growing up, which considering I was raised by a British mother is saying something, since the British typically overcook EVERYTHING, lol. Even though I like veggies as a child, I delighted in them when I started growing my own, and realizing how many amazing varieties of them there are. I now grow things that most people have never even heard of, and it still amazes me how many things even I have never tried...but I am getting there! I try to add a new odd veggie to my garden every year, usually with very pleasing results. I used to always eat the veggies on the plate first, one example being lima beans (which were considered a veggie then). One time, when I was in my teens, we were at a cousin of Moms and they asked, " Velda would you like some lima beans? " . Before I could say No thank you (finally an opportunity to refuse them), Mom chimes in, Oh yes Velda Loves them, she always eats them first. You should have seen Mom's face when I turned and said, I eat the limas first because I can get them out of the way so I can eat the good stuff. Now, you have to understand, I was an only child, and my parents were really wonderful and never would have to eat them, had I shown an absolute aversion to them as I did to liver (Dad would cook my hamburger steak, remove it from the pan, and then cook their liver so I did not have to taste liver. Anyhow, it was all very funny. And to think that now I love veggies. In fact I can't really think of any I have tried that I don't like, when prepared right! I would rather eat a salad and a VM soup than most other things much of the time, but I still have to fix meat for my meat loving husband and son, so I eat some too. I simply make a really great salad, a VM soup, and nicely steamed veggies take up more room in the meal , so they don't know it but they end up eating more veggies too. Yet again, I was/am astounded at the LACK of available decent food. My daughter has been vegetarian since she was very young (her choice, not something I forced on her), and she CRAVES veggies-would rather eat a raw head of broccoli than a bag of doritos or chips. It was VERY hard to find decent foods for her (I take my own stuff due to my allergies) We thought we would at least be able to find her a decent salad or something, but the choices are VERY limited. We rarely eat out-haven't in years, so I hadn't realized how unavailable true "food" is! Shocking array of fried chemical smelling garbage, not much else! We ended up going to a grocery store to try to find some decent veggies to cook in the hotel, but there was NO organic food to be found anywhere. I hadn't planned ahead enough to share my safe foods with her, so she pretty much had to make do with insipid looking salads full of very pale, unappealing looking veggies, which were all we could find. As much fun as she was having, she said she couldn't WAIT to get home to our Vitamix-first thing she wanted when we got home was a massive green smoothie with our own fresh veggies! Her friends that were with us were more than happy to consume the junk offerings, and the SMELL-uggggg! I am not used to being around such things any more-yuck. Even though I like veggies as a child, I delighted in them when I started growing my own, and realizing how many amazing varieties of them there are. I now grow things that most people have never even heard of, and it still amazes me how many things even I have never tried...but I am getting there! I try to add a new odd veggie to my garden every year, usually with very pleasing results. When we traveled in the RV in 08, through 20 some states, it was often a challenge, between the lack of stores and fresh veggies, to the lack of organics and the small RV fridge. I was so glad to be home to my readily available fresh stuff here. Another parent was supposed to take the kids for their spring break trip, but bailed out at the last minute. Had I not stepped in to go, their deposit would have been lost and the trip ruined. I am glad I went, but had I had proper time to plan, I would have made better provisions, and stocked up the RV. It looks so much prettier when it is a nice bright green. I always said I hated spinach until I tried it in a green smoothie. What I found was that I hated the mushy cooked spinach but loved it fresh in a smoothie or salad. Now I make sure to try different recipes or preparation methods before saying I don't like something. I even found a great recipe for veggie lasagna. The same thing happened with cottage cheese. I've always thought I hated it but I just hate the texture. Blended up until it is smooth, I really like it. I even make a vegetarian meatloaf with cottage cheese. > >> That happens so often. It looks pretty gross when you first put it in the pan but I just cover it with a mix of tomato/bbq sauce. Based on the reviews, I cut out the oil, use 2 eggs, and reduce the walnuts. It also took longer to cook than it said but i bought one of those meatloaf pans at Walmart and it works better with that. It's better the next day.
