question on pumpkin soup

I made pumpkin soup last night from part of the solar cooked pumpkin.

I used:

pumpkin maybe 1 1/2 cups

home cooked defatted chicken broth

small amount of cinnamon

half a fuji apple

tiny shake of sea salt

I thought it was pretty good, tasted very pumpkiny. Husband thought it

was icky bitter. I think he is interpreting the pumpkin/squash flavor as

bitter.

Any thoughts?

Later in day I added a handful of raw cashew pieces and the other half

of the apple, a little more pumpkin and more chicken broth and a little

chicken broth concentrate (Better Than Bouillion).

He would not even taste it. I thought it was a bit milder than earlier

and really creamy smooth. I have the rest in the fridge in a jar and

will warm for a late lunch.

Was hoping I could get him to drink some as he likes my broccoli and

mixed veg soups (both I put cheddar cheese in).

Velda
