It's fine for smoothies but it's a bit gooey getting it out if the skin. I think I have frozen most fruit with no problem. Guest guest Posted February 12, 2012 Report Share Posted February 12, 2012 I think if you use the vacuum machine it will cause your bananas, if they are truly ripe, to be smushed together so that they will be more difficult to break apart for use. I would hazard a guess that they might not be quickly enough frozen. If you are putting them in the freezer promptly after peeling/breaking up/bagging, then check your freezer temperature. The reason I say that is that when I got a new freezer after my old one (42 years old!) wasn't able any more to stay at O°, suddenly my food began to freeze with it's natural color, rather than pale or brownish versions of it's former self. Guest guest Posted February 12, 2012 Report Share Posted February 12, 2012 In the case of vacuum sealing-I would freeze the banana in chunks on a cookie sheet, then put them in a vac seal bag to vac seal, to avoid mushing. Can't help you much as I am allergic to banana so only buy them for family who eat them right away.
