I actually bought some yams at the grocery this weekend and I'm thinking of actually cooking for my husband and making them (he loves yams) - does anyone know a good BFL recipe off the top of her head? > Lorraine, I know one for sweet potatoes, not sure if it works for yams. Cook 1 portion sweet potato (either nuke it or bake it), blend with 1 portion cottage cheese, and spice with vanilla, pumpkin pie spice and sweetener. Tastes similar to a pumpkin pie/cheesecake. Place in ziptop bag and add: 1 tsp. salt 1/2 tsp. pepper 1/4 tsp. thyme 1/8 tsp. nutmeg 1 tsp. oil (optional) Toss to coat. Spread flat onto a cookie sheet that's been coated w/ cooking spray. Cook on BOTTOM rack of oven at 450 degrees. Check after 8 minutes or so. Once that side is browned, turn over to other side. Cook another 8 minutes or so. Keep checking to make sure they don't burn. Guest guest Posted April 29, 2003 Report Share Posted April 29, 2003 Well, this isn't really an official recipe per se, but I love yams microwaved for a few minutes until they're soft, then sprinkled with cinnmon/nutmeg/equal or splenda and spritzed with butter spray with 1/2 cup or so of cottage cheese on top. But when I go to the grocery store, they have 3 bins: Yams, sweet potatoes and garnered yams; and they all look a litte different. So does that mean that I could pick any of them and they'd be pretty similar? And to think at lunch I drove all the way to the other store cuz the first store had rotten " sweet potatoes " but the yams were fine...geeze...just my luck! Thanks for the info! Roasted Sweet Potatoes with caramelized onion (one serving=232 Calories, 4.2 gm fat, 0.7 gm saturated fat 46 gm carb.) Use non fat yogurt and less olive oil. 4 small yams or sweet potatoes 1 tablespoon olive oil 1 med red onion thinly sliced 2 teaspoons balsamic vinegar Salt & pepper to taste 1/4 cup low fat yogurt or non-fat 2 garlic cloves minced Bake potatoes until tender (350 for 40 minutes or so) Heat olive oil in skillet and cover and cook onion on low, stirring a few times until caramelized about 15 min. Turn heat off and stir in vinegar, salt and pepper. In bowl mix yogurt with garlic and salt, pepper for taste Split the potatoes, leaving them attatched at the bottom. Season the inside with salt and pepper. Spoon 1tbsp of garlic yogurt into each potato then fill with onion. Serve or gently wrap in foil for packing. Hope you guys like this recipe. It is amazing that they are so much lower glycemic than regular white potatoes. Having given up all white starches I usually buy sweet potatoes by the boatload. The chips sound interesting. Stab it a few times with a fork, wrap it in clear wrap & then cook it on high for 5 min. or till soft. My fav way to eat a sweet potato is to cut it into chunks, skin & all, sprinkle Molly McButter on it & then toss it on a huge salad along with some salmon or chicken & some flax oil dressing. It is so YUMMY!!!! I also make Spicy Baked Yams. I don't make them often, cause they are time consuming, but they are yummy! Here's the recipe: *Preheat oven to 375. *Cut 2 lbs yams or sweet potatos into 1 " pieces (or slices) *Put pieces in roasting pan along with 2 Tbs. lite olive oil (or just lightly spray with PAM) 1/2 tsp salt 1/4 tsp ground black pepper 1/4 tsp chili powder *Turn pieces to coat well. Bake, turning often til brown on all sides. * Add 1/2 Tbsp of water to pan & bake to softened - 15 min more.
