I am the proud owner if a 22lb pumpkin (so very happy). Aside from the usual

culprits like smoothies, ice cream and pies. Does anyone have any other recipe

ideas? I've made several pumpkin curries and a couple of soups before getting

this bad boy! Also is it safe to just cut it in to chunks and freeze it (without

cooking)? Don't want to waste it.

WOW, that is a whopper! I grow my own pumpkins, and they average between 4-12 pounds-lil babies compared to yours, lol. I do sometimes have a huge one though. I roast them whole, which makes them WAY easier to handle, even more so since I roast them in my solar oven, which is totally no fuss, but you can do them whole in a regular oven too-just do them in a very slow oven for a long time, rather than trying to rush it. Roasting whole makes it sooooooo much easier to cut after its cooked, when it is nice and soft. I just cut the cooked pumpkin in half (I have a huge commercial cookie sheet that I put under it to catch drips and runoff) Just slice it down the middle, scoop out the seeds and fibers (you can save the seeds for roasting, but they are very fiddly to removed from the fibers-I often just pop the whole mass in the

Vitamix and buzz up the seeds and fibers together, then add it other recipes) Once cooked, you can easily puree the flesh and freeze it for later use. I sometimes freeze it in ice cube trays, but often put portions in mason jars to freeze (leave head space in the jar) or vac seal and freeze in bags. Pumpkin is one of my staple foods-so very healthy and nutritious. I do NOT recommend freezing the chunks without cooking-they will get freezer burn crystals very quickly and not be any good.
