cream of carrot soup

I have at least a pound of baby carrots. I want to make a cream of carrot soup. I' devising my own recipe and I don't know if it will work, but here are my thoughts...

1 pound of baby carrots steamed, 1 clove of garlic, 1 can of chicken soup. Blend hot. Pour into pot and simmer, add salt & pepper (and ginger (maybe) to taste. Serve in bowls and add 1/2 & 1/2 or heavy cream (about 2 Tablespoons per serving) .

What do you think? I've already steamed the baby carrots in my steamer. But, I have not done anything else.

Waiting for the more knowledgeable to help me out.

I fail dreadfully with ice cream. I don't use my vitamix as much as I should. I used to make bread and that came out wonderfully.

Hello Roslyn,I sent a post to the list to help answer your question:/message/19124Regarding the recipe you are thinking of - sounds great to me, except I would make it all in the Vitamix and skip the pot (let it blend on high until the sides of the container are really hot to the touch). If the noise is too much for you - you might do what I do - leave the room and carry a timer with me and check on it every 3 minutes or so. If starting with hot ingredients, 6 minutes is usually more than enough!Also, you can add fresh ginger to the Vitamix while blending.Regarding the ice cream - there is a link in our archives titled, "Ice Cream Making Technique"/linksThe links are listed alphabetically.

Welcome Roslyn! I have a old recipe I have not made in a while, but I

think might make a good Carrot Cream soup if put in VM. The original

called for sauteeing carrots and onions, then adding brown rice and

chicken broth and cooking together. I think you could saute the carrot

and onion and add cooked rice and broth and spin in VM until steamy and

I bet it would be delicious. I will try it after the holidays are over.

I have been meaning to make a batch of the soup for a while. It may have

been in the original Laurels Kitchen cookbook, I would have to dig that

out.
