Hi all,

Today I was going to be gone all day chaperoning an end-of-the-year school

picnic. So this morning I put 6 bone-in chicken breasts and some sliced

onions in the crockpot with a carton of coconut cream and some seasonings

such as cumin, cinnamon, cardomom, fennel and garlic. When I got home, it

smelled so good! I lightly steamed some spinach from my garden to serve it

over.

Well...it was a BIG disappointment! I guess I pictured it as being creamy.

Instead, the chicken was just in broth and the coconut cream had sortof

curdled. I think it also overcooked as the chicken was a little dry (I guess

that's

what I get for using only white meat.)

Any ideas what I did wrong? And how to save the remains (about 5 1/2

chicken breasts)? I was thinking I may try making it into a creamy soup...

I love Indian-type food, but obviously don't know anything about making it!
