Chia or flax gel will take on the EXACT consistency of an egg when mixed with warm water, and works a charm as an egg substitute-I have even used it for french toast! (It also makes a wonderful chemical free hair gel, and if you add a bit of peroxide and baking soda to it, makes a perfect gel type toilet bowl cleaner that will cling to the bowl to bleach out stains! I also make up a batch of "gel" by adding a little WARM water to the flax or chia, covering it, and letting it gel for a few minutes, stir with a fork, then store in the fridge-keeps for a week or more. I find that by doing this, I safe myself time in the long run, as I have instant gel on hand. I use it as an egg substitute, so it is nice to have it at the ready.
