Hey Bonnie,I made it both ways and the one with the lemon peel did not taste anywhere near as good as the one with the peel.

trip to Las Vegas for a meeting

(courtesy of Vitamix) and I sat beside

another demonstrator on the plane (the

leg from Atlanta to Las Vegas).  She

shared with me her favorite sorbet - the

one she uses in her demonstrations.

 

SPINACH

SORBET:

1

banana

1/2

lemon (with seeds and peel, cut off

thick rind on end)

1 cup

of raw spinach

1/2

avacado peeled

1/4 c

*sweetener

1/2 - 2

cups of ice (start with small

amounts, increase as you go to make

thicker)

Blend

on high for 60 to 90 seconds

 

She says it is a

smashing hit every time.  I'll be making

it tonight to see how my picky eaters

like it!

Unfortunately the wondwrful therapeutic value of rhe lemon oil would be lost as the oil is all in the peel.

I always thought the bitterness was in the white part (pith) between

the yellow peel and the lemon flesh. And with the oil in the yellow

peel, you could, I guess, use a peeler to remove the yellow part,

drop in the VM, and then remove the white and discard, before

putting the flesh in the VM. Has anyone tried that?

That all said, I do use a slice (quarter inch maybe or a little

more) of the whole lemon in my smoothies sometimes and don't notice

any bitter from that unless I try to store some of the smoothie in

the fridge over night.

I wonder if you could just use the zest of the lemon instead of the whole peel to add the lemony flavour without the bitterness, as well as getting the benefits of the oil?

What is the therapeutic value of the lemon oil?You can most certainly leave the peel on if you want to! :-)

Hi Velda,In my shows I use lemon wedges with the peel in my tortilla soup. When people ask about the peel I've always said, if it is just a very small slice you can leave the peel in, but anytime a recipe calls for a quarter (or more) of a lemon, I always peel it. Of the 3 citrus peels (lemon, lime and orange) lemon is the one that is least offensive (bitter) if eaten, but it is still bitter. This recipe was from another demonstrator and she loves it, so I thought that there must be something special about her ingredients that overcame the bitterness factor of the lemon (especially since lemon is the milder of the citrus peels) but my taste test proved (to me at least) that it was too much!The thought that the pith is the most bitter part is a common one. I think it comes from the fact that zest is used in recipes, so the idea must be that the zest mustn't be the bitter part, but all you have to do is cut off a piece of white pith, then cut off a small piece of zest and do a side-by-side taste test to see that the zest is bitter and the white pith, not as bitter. The zest has the citrus oil in it and the oils are bitter. This is why ALL recipes that call for citrus zest also call for sugar (to balance the bitter!)Also, the pith has the most of the bioflavanoids. Bioflavanoids help make the vitamin C available for absorption in your body, so consuming the pith is a good thing! I just rub the colored part of the orange skin onto the grimy area, rubbing the orange peel into it (the area turns orangish with orange peel residue) then I wipe it all off with a wet sponge and voila - it works as well or better than nasty chemical de-greasers!

That is interesting. I do use the whole lemon in slices in

smoothies, and never gave all of this much thought.

A slice (in my experience taste wise) would be fine it fits in my "rule of thumb" as something under a quarter of a lemon. As far as taste goes - my kids still ate the one with the peel :-)

   Hello Everyone, 

Right before Thanksgiving I got to take an AWESOME trip to Las Vegas for a meeting (courtesy of Vitamix) and I sat beside another demonstrator on the plane (the leg from Atlanta to Las Vegas).  She shared with me her favorite sorbet - the one she uses in her demonstrations.

 SPINACH SORBET:1 banana1/2 lemon (with seeds and peel, cut off thick rind on end)

1 cup of raw spinach1/2 avacado peeled1/4 c *sweetener1/2 - 2 cups of ice (start with small amounts, increase as you go to make thicker)Blend on high for 60 to 90 seconds

 She says it is a smashing hit every time.  I'll be making it tonight to see how my picky eaters like it!
