Hello,

Roslyn just joined us and in her approval request mentioned looking for Cream of

Carrot Soup recipes.

WELCOME Roslyn! So glad you asked this question because while searching for

recipes, I found a few that I want to try!

A nifty (and healthy) tip - just about any soup recipe can be made more creamy

by adding a hand full (or two) of cashews! (of course, adding cream works too

;-)

Here are a load of Cream of Carrot Soup recipes and for the most part - any time

they say to use a blender, you can just substitute the Vitamix!

Thank you Lea Ann. I added a slice of fresh ginger to my recipe. I simmer it

in a pot after to smooth the flavors out a bit more. I've tasted it and it

tasts pretty good as is, but I will add a touch of salt & pepper to brighten it.

Then when I serve it I'll add some heave cream, cause that's what I have in my

fridg. It will be my dinner with a slice cheese on whole wheat bread.

I'm going to try cream of broccoli next. That's my next search.
