Hello Janet,Whey is the liquid that is left over after dairy (preferably raw) is fermented - fermented dairy = cheese, yogurt, keifer, sour cream, butter (butter can be cultured too!), cream cheese, cottage cheese (aka curds and whey)The easiest way to get whey is to take a strainer, line it with a double layer of cheese cloth (or an old, clean t-shirt cut up and saved for this purpose like at my house) and dump some freshly made yogurt in the lined strainer (which is inside of a bowl). If you let it sit over night, you will have delicious cream cheese in the strainer, and whey in the bowl below the strainer. If you let it sit only for a few hours, you will have home made Greek Yogurt! (yes, you can take any store brand of yogurt and turn it into Greek Yogurt!)I've made whey from store bought yogurt, and I chose Stonyfield Farms because it is the only company where I've called the headquarters to verify that the bacteria cultures are added AFTER the milk is pasteurized. In fact, I used Sonyfield Farms as the starter culture for the first batch of yogurt I made from raw milk and it was WONDERFUL! That recipe for ginger carrots sounds good and very easy. One question, where do you get whey? Is it by the milk in the grocery store or is it at a health food store? Is it whey protein powder?
