I steam my rice (or quinoa) and I do add a pinch of sea salt, I also add a bit

of agave nectar and a few tapioca pearls for body and texture, which makes it a

bit creamier. I just steam a spoonful of tapioca right in with the rice.

I am not sure why the recipes you are looking at has so much water and cooks for so long but Vitamix has a recipe for rice milk on their web site. http://www.vitamix.com/recipes/ Vitamix recipe is 4 parts water to cooked rice and most brown rice is cooked in 30 to 45 minutes depending on your recipe. Hi Tom,Thanks for that link.  I looked at their recipe and if my calculations are correct, then the proportions are about the same.  Isn't 1/2 C cooked rice about 1/4 C raw?  If so, then the water amount is the same (1/2 C cooked rice w/2 C water or 1/4 raw rice w/2 C water = 1 C raw rice w/ 8 C water).  However, as you pointed out, the cooking time is greatly reduced and that would be very helpful.  DH says this way makes it " slimy " (aka creamy - LOL!).  I'll try it that way for my next batch.  Thanks again!

You're right it would take 8 cups from beginning to end to make rice milk the Vitamix way but I don't believe your container is big enough to handle that task in one batch. I tried making rice milk to the same recipe you used and I cut it in half and

cooked it for 3 hours then added more water and blended it up in the Vitamix. I

did not like the milk at all. I was wondering which kind of brown rice would be

best for making rice milk? I like it from the store, but would like to make it

at home. Maybe the kind of rice I used was not the best for milk. I think I

used basmati brown rice. I bought some sweet brown rice and was wondering if

that would make better milk? Anyone know? Or the 3 hours cooking time could be

too much too.

So, I have reverted to making my almond milk which is so easy and I do it every

week at least once. Lately I have been wanting some hot chocolate and I made

some in the Vitamix.

Hot Chocolate - makes 2 cups

1 cup almond milk (5 cups water, 1/2 cup blanched- 24 hours soaked almonds, 1

tablespoon chia gel, 1 teaspoon vanilla)

1 tablespoon chia gel

2 tablespoons dark chocolate cocoa powder

2 cups spinach

10 to 20 drops vanilla stevia or

10 to 20 drops stevia and 1 teaspoon vanilla

Blend in Vitamix until warm. Very tasty. I like heating it in the Vitamix to

get it foamy.

Janet I have never made rice milk so I'll leave that to others to answer. I have rice often over the years but I have never cooked it for 3 hours. I have made rice porridge with regular long grain brown rice by grinding raw rice in the dry container. I used the guidelines in the Vitamix Whole Grains cookbook. It turned out pretty good but I prefer cereal with more fiber. I have added brown rice to my mixture of oats, wheat, and flax seed. To me the rice mellows the stronger grains in my cereal mixture. Hi Janet,What don't you like about the milk you are making at home?  I just use regular long grain brown rice.  It isn't white like the store bought and it is very " creamy " (my DH calls it slimy).  I am going to try the recipe Tom pointed out on the Vitamix web site and see if it turns out better for our taste.  I think the long cooking time is for blending with a regular blender so that the grain is broken down more (all the clips I saw on the internet were just using a regular blender).

Do you strain your milk?  I use a nut-milk bag but it doesn't seem to leave much behind.  Maybe straining with a tea towel would catch more of the fiber.Rena
