Wonderful Duck Egg Recipe

My cooktop is out of order (EEK!), so...this morning I had to think of another

way to make our eggs for breakfast. This is what I came up with-

First, I buttered a few custard/flan cups (you know, those things that are about

2 1/2 to 3 inches in diameter and about an inch and a half tall). Then I broke a

duck egg into each of them (they are so big, it only takes one!) I poured on

about a tablespoon of MOM's cream, seasoned with a little salt and pepper

and then ran out to the garden and got some chives to sprinkle on top. I baked

them in a 350 degree oven until the white was set and the yolk still runny

(maybe about 5 minutes?). They were REALLY good! We had them with

some leftover asparagus (also from the garden). Now for something with

rhubarb...
