Glad you are joining us . Once you learn to use the VM, you will

love what it does. And you will get a long list of ways people use their

VM as well. I use mine mainly for smoothies, ice cream, soup, sauces,

salad dressings, and grinding flour.

As to recipes for diabetics. Most diabetics these days are taught to

count carbs and are given a suggested number of carbs per meal, so it

depends on that number as to what they eat, and not so much any more on

a particular type of food. I have used sugar substitutes to lower carb

count for my husband a long time diabetic in some recipes, but mostly he

looks up and counts the carbs on whatever I fix and bases his serving

size on the carb count. We have found soups have a low glycemic effect,

so he has to be careful in that a meal of soup will not hold up his

blood sugar and he has had low blood sugar after soup meals, so we are

careful.

As to settings, I need to know what model you have. The older models,

such as my old 3600 with it's metal canister had a reverse switch and a

number dial, and a on off. My new 5200 has a low and high range switch,

plus the rotating dial with speeds 1 to 9 (or is it 10, I'm not in

kitchen at moment) and a on off switch. With the newer models, make sure

your switch is on low range and lid is on tight before you start or you

will redecorate your kitchen. With say a smoothie, I start on low range,

low speed, and work my way up, when speed reaches top then I switch to

high range until done. Takes only a minute or so for smoothie to bed

smooth. Soups may take 6 min to be really steaming hot and done. So it

depends on what you want to do. Give us more info on what you want to do

and we will help. Also, check the archives (stored messages and photo

and files sections) on our group pages and type into search something

you want to make such as broccoli soup and you may find lots of ideas.

Lea Ann, and our other leaders here will have lots of things to help,

but being as I am on west coast and reading this late in evening, they

are mostly asleep right now and will get back to you in a few hours when

their days begin.

Can you tell me if your model has a variable control knob in the middle, a

switch that says on and off, and a switch that says variable and high?

Also, can you tell me if you have the " Whole Foods Cookbook " , a " Getting Started

Guide " , and the DVD that comes with most Vitamix machines for home use? Aside

from these tools, here are some other really good resources for how to use your

machine:

the " how to " ) Don't forget to review the FAQs

For diabetes, I have found that eliminating ALL forms of sugar (except Stevia

and low Glycemic Fruits) and grains in any form is a great first step. It

doesn't have to be permanent, but if you give this way of eating a trial, you

might feel so good and have so much energy that you never want to go back! :-)

I am pre-diabetic, and I gave up wheat 4 years ago, and eventually, just dropped

all grains. I started out using dates for sweetness (at least they bring along

some fiber with the sugar), but have since gone to NO sweeteners or only liquid

Stevia.

I am currently reading Dr. Rosedale's book - http://drrosedale.com/ and find his

views on the relationship between leptin and insulin very enlightening. Here is

a quote of his from this link:

I am interested in

chopping vegetables for soups

Grating carrots,pineapple,apples for carrot salads

Making juice /smoothies/soups etc.

I would like to know if I can mix dough

I have 1 container w/ dry stamped on blade and 1 with nothing stamped on blade

I am contacting Vita mix today abt a book for the machine.

Lea Ann I have two granddaughters with type 1 diabetes, the oldest is 12 and

she has had it since she was one and the other is seven and has had diabetes

for about a year now. As you know it can be challenging for parents to have

their children eat a balanced diet when healthy it is really difficult for

children with diabetes. My daughter handles it this way she is concerned

with mainly carbs. That is not to say the kids eat a bunch of empty carbs

but if they have an extra slice of bread she just makes adjustments to their

pumps to give more insulin. As far as sugars go the kids will get diarrhea

if they eat too much sugar substitutes and dried fruit like dates have a

fair amount of carbs. While the oldest granddaughter is getting pretty good

at identifying her carbs correctly they often choose meals they can look up

easily for the nutritional information like chain restaurants or packaged

foods that list carbs.

One of my intentions for buying a Vitamix was to make eating a healthy blend

of fruits and vegetables a fun thing for the kids when they came over which

is fairly often since they don't live very far away. I wanted them to pick

out a recipe from the cookbook and have them make it. I even paid extra for

the Professional series so even the youngest one could add her ingredients

and push the button. That is way I was frustrated with the Create Cookbook

when I discovered there were no nutritional values for the recipes because I

need to know that information to make choices that won't cause sugar highs.

Hello Tom,Have you tried Stevia with your granddaughters? It is more natural than most sugar substitutes and might not have the same effects. (I know that I have the same reaction to zylitol as your granddaughters but never to Stevia).

Yes we have tried that one too. They don't seem to like that one very much in fact I think I still have the remainder of the box of it in the closet. I didn't care for it either.
