Some things to keep in mind… Enzymes are usually denatured (inactive) after about half an hour, Vitamins slowly oxidize over time (I'd guess that by 48 hours quite a bit of vitamin benefits will be gone), but the fiber and minerals will always be there.Losing fresh, live enzymes isn't the best thing, but any cooked food is also without enzymes and ALL juices in the store have the enzymes destroyed through pasteurization.
