Hello BethAnn,You sure can store juice. Some things to keep in mind… Enzymes are usually denatured (inactive) after about half an hour, Vitamins slowly oxidize over time (I'd guess that by 48 hours quite a bit of vitamin benefits will be gone), but the fiber and minerals will always be there.Losing fresh, live enzymes isn't the best thing, but any cooked food is also without enzymes and ALL juices in the store have the enzymes destroyed through pasteurization. Just an FYI - I take digestive enzymes from the Health Food Store with every meal (raw or not).I always like to joke that a smoothie that has been stored for a while (or made with non-organic fruits and/or veggies) beats a Snickers Bar any time! :-)

What if you freeze it?  Will that preserve the enzymes?

It won't preserve the enzymes, but it will slow down the loss of Vitamins to oxidation some.
