I haven't tried it, but have discussed it with someone who does white potatoes and onions on a regular bases. He told me that you have to press as much juice as possible out of the shredded potato before frying.Let us know how it turns out for you if you try it!

I have done sweet potatoes many times, but I don't fry them-I dehydrate them or

toss them in baked goods such as muffins. If you do them a little longer, they

will " rice " like the riced cauliflower in my video at

Put the shredded potatoes in a tea towel or a flour sack dishtowel in the middle, bring up the four corners and squeeze and wring all the water and juice you can out of the potatoes before you fry them.  When you fry them it also helps to lightly dust about a teaspoon of flour on them in the frying pan.  Be sure to let them sit on one side for 5 to 10 minutes or longer before turning them if you want crispy fried hashbrowns. Do the other side as long too.

Forgot to mention… it is done with the "wet chopping method"As mentioned, it is VERY important to thoroughly dry the hashed potatoes before frying. gave a very good description of how to do this:Put the shredded potatoes in a tea towel or a flour sack dishtowel in the middle, bring up the four corners and squeeze and wring all the water and juice you can out of the potatoes before you fry them.
