Hello Fran,All nut butters are made at the 3 cup mark (minimum) up the the 4 cup level (maximum). Nuts with less oil like almonds and to a lesser degree cashews should come closer to the 3 cup mark. Nuts with plenty of natural oils can be added to the 4 cup level - peanuts and mixed nuts fall into this category. If you are not sure, start at 3 cups for your first batch.With Dean's Nutty Butter mixes you can go to the 4 cup line. Honey Roasted Peanuts and m-n-m's were the first we ever made, but lately we've been experimenting (with EXCELLENT results) with replacing the m-n-m's with white chocolate chips, dark chocolate chips, and butterscotch. Not so healthy, but YUM!!!I LOVE the 32 oz. container for nut butters - it is so much easier to get the nut butter out of the little container (less distance from the blades to the pour spout :-)

Thanks for the quick reply! I know these recipes are not so healthy, but since it's holiday time, I'm going for the YUM!!!!

I was thinking of trying this too! So just to clarify, does that mean 1/2

peanuts, 1/2 chocolate up to the 4 cup line? I haven't even tried regular nut

butter yet but I assume your great tips for that still apply here?

Speaking about treats from the Vitamix:

Today is my son's birthday and instead of a cake I made him a chocolate pie in the Vitamix.  I doubled the chocolate pudding recipe on the recipe pages of this group plus adding a teaspoon of xanthan gum to make the pudding thick enough to stand up in the pie.  It was fabulous.  I baked a spelt pie crust from Whole Foods first and let it cool.  Then added the chocolate pudding and put it in the refrigerator for a few hours.  Delicious and a new family treat.

Recipe for chocolate pudding pie is:

2 avocados

1/2 cup agave nectar

1/2 tsp salt

4 teaspoons vanilla

1/2 cup dark chocolate cocoa powder

1 teaspoon xanthan gum

Put all ingredients into the Vitamix.  Turn on HI for a few seconds to blend.

Pour into a pie crust and refrigerate. (You could use a graham cracker crust)
