Coconut oil in salad dressing?

Before I try to make this has anyone tried it? My coconut oil is rather solid,

so I thought I could whip it together in the VM, but will it stay that way?

Maybe this is not the most practical use for coconut oil but I'm not ready to

just eat it yet. Any thoughts?
