Hi Leanne.

When you talk about using Coconut Milk (full fat) in an "ice cream" recipe are you talking about the coconut milk in a can like from Thai Kitchen? Or are you talking about the thin coconut milk that comes in cartons like from SO Delicious?

Thanks much!

So, what's the trick to getting an ice cream like consistency with coconut milk? The best I've been able to get is a "milkshake". :-/ On Oct 26, 2011, at 1:40 PM, "A E HARDY" <gengundog@...> wrote: Just left Lee Ann at the whole foods mkt. in P. B. Hey there Austin - it was great to meet you in person! Had a great day (after the slow start - sorry I wasn't set up when you got there!) I'll let you know when I come back to that area and you can come on the 2nd day :-)

Hello - did you follow these guidelines when making your ice cream with coconut milk?/message/17417I use coconut milk to the 1 cup line, then add frozen berries to just under the 4 cup line (berries are pretty dense and you don't need quite as much). You could also make coconut milk ice cubes and mix frozen coconut milk with the liquid…
