I usually just blend mine using a fork, but if it makes such a difference, I should try it. You can even drop a chunk of cheese in there with the veggies and it all gets chopped up at the same time! I got lazy and picked up pico de gallo at Costco the other day (because they finally have a no preservative brand in their fridge) and sauteed a couple of spoonfuls in a tiny bit of evoo, then added the eggs and stirred. Guest guest Posted November 13, 2011 Report Share Posted November 13, 2011 No I didn’t add anything….I put 5 eggs into the blender, turned it on 1 and up the dial, maybe to 2 or 3, I really didn’t pay attention, I just knew I didn’t want to stir them much, just a bit…then I poured them over the veggies I already had sauteéing in the skillet…It made the most creamy omelet….I had onions, celery, red and yellow bell pepper and broccoli…then I poured the eggs over them, then I put chunks of avocado on, some green and black olives, some shredded pepper jack cheese, then stuck in the oven till the cheese melted all over…..so creamy and tender. I did season with cayenne, Himalayan pink salt, pepper and Fine Herbs, but I sprinkled them directly over the eggs after I poured them over the veggies. Maybe she mentioned The Inn at Little Washington which is not too far from Wash.,dc.
