cream soups: milk vs evaporated milk vs half and half vs dry milk??

Hi! My name is and I am new to your group and so excited to find you! I

just purchased my Vitamix 3 wks ago after wanting one for the past 10 years. All

I can say is that I should have gotten it sooner and don't know how I lived

without one. I even brought it with me on the plane on my trip for the past 2

wks to AZ! I feel sorry for the poor man who sat next to me as all I did was

talk about my love for the Vitamix for the entire 6 hour flight!

My question is when making cream soups some receipes call for milk, some call

for evaporated milk, some use half and half and some dry milk. What is the

difference in the finished product and/or they interchangable? I will note that

I use all low or non fat dairy to keep the calories low.

Congratulations on your purchase, and welcome to the group, ! I know just what you mean about talking up your love of the VM to people! :) my husband, who completely doubted whether I would actually use the thing like I KNEW I would, now is the one talking it up to people! Last weekend we were camping at a bluegrass music festival, and while I was at our camper making some corn tortillas (I make my own because three of us in my family are gf, and I can't stand the store pre-packaged corn tortillas) I overheard him going on to some folks about the wonderful concoctions I come up with using my VM, lol! I was quite delighted, to say the least. ;)As for the milk substitutions, I think that if using low or non fat dairy is working for you, then why not? I find myself using a few cashews for creaminess in soups more than anything else, but that's just a matter of personal preference. So funny about your husband!! I have been away since I got mine but when I return home next Friday my husband won't know what hit him! He will be having some healthy food for a change as he has been for 60 years a junk food junkie!! Thanks again,

Hello and WELCOME to the list!LOL about you talking the guy's ear off about the Vitamix - I KNOW how you feel - it is hard to explain that it's not JUST a $400 blender!About the different forms of milk. When it calls for dry milk they are going for the milk flavor without adding any extra liquid (usually in ice creams where the proportions of frozen to liquid ingredients really matter). Condensed milk has different properties than half-n-half, so I'd stick with the recipes for those too. But if a recipe calls for just milk you could use whole, skim, almond, cashew, coconut, rice, soy, etc.

Condensed milk is usually milk that has been reduced by half. So if you need

3/4 cup of condensed milk, you can make it by reducing 1.5 cups by half. I have

successfully used regular milk in place of condensed milk for casseroles when I

didn't want to run out just for that one ingredient, but don't know about other

recipes. I would assume half and half is creamier/heavier, so it probably

affects the thickness for a soup. HTH!

Hi Lea Ann, thanks so much for clarifying my dairy mystery. It makes more sense now. I am sure that I will have a million questions as I begin my Vitamix journey and I appreciate all of your tips and the great suggestions from the group. It's only been 3 weeks and I have probably had more vegetables than I have had in the past 6 months!I actually feel healthier, have more energy and am sleeping so much better. I put fax seeds in my daily smoothies and soups and have not had a hot flash for 3 weeks!! Best regards,
