For me... I resolve to do the following things regarding my diet...

!) Eat more LIVER, yum!

2) Eat more BEETS (and many other related VEGETABLES)

3) Join a CSA , less LUND'S more COOP!

4) Eat (even) more COCONUT OIL

5) No late, late heavy meals

6) CLEANSE MY LIVER with the seasons!

7) Drink more KEFIR

8) Eat more Minnesota APPLES

9) Go to SLOW FOODS in ITALY in 2005

10) Enjoy PIZZA NIGHTS (and my friends!)

There's probably more, but it all adds up to NO MORE GALLSTONES, NO

MORE HOSPITALS for me in 2005. All the rest is just a blessing!!

And WE ARE ALL BLESSED!!!

Will, leaving 2004 and can't wait for 2005

Will,

I may be able to help you with some suggestions for beets. In addition to

drinking (Therese's) beet kvass (should we consider her production shut

down for now?), we eat beets quite often. Occasionally, I will roast them, but

usually, I just boil them until tender and serve them on a Greek salad or as a

side dish drizzled with good olive oil and oregano, maybe with ACV. I think

they are beautiful and tasty!

I have sortof been toying with doing the Maker's Diet for 40 days... I was

looking it over last night and my biggest barrier is that I cook for a whole

family

not just myself. I don't know if I can bring them with me on this journey

(because I'd have to help them carry their bags) and I don't know if I can go

alone!

My resolutions are:

1. Shop for and eat locally-grown foods;

2. Eat out less so I know what's in the food I'm eating;

3. Try at least two NT recipes per month.

4. Fight back against federal/corporate interference with raw milk, as

well as other personal freedoms we take for granted.
