I could make it a sorbet or a smoothie depending on which I wanted and how long I blended. Great flavor combination suggestion!WISH that I could handle the sugars from pineapple better. I bet that the full-fat coconut milk would help mitigate the sugar fluctuation. I might give this a try... My canned cranberries had the bad sweetner built in. Maybe use dates or agave or honey or something to sweeten it up a bit.
