Soup Base 2 small to medium potatoes, cooked and chopped (Yukon Gold or red skin) 2 cups (480 ml) skim milk 1/4 teaspoon white pepper 1/2 teaspoon garlic salt 1/2 teaspoon celery salt 1/2 teaspoon lemon pepper seasoning 1. Place all soup base ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and slowly increase speed to Variable 10, then to High. 4. Blend for 5 minutes or until heavy steam escapes from the vented lid. Add to soup base on Variable 1/2 cup-1 cup (66-132 g) Swiss cheese, cut in large chunks 1/2 teaspoon caraway seeds 1 tablespoon Thousand Island dressing 1 tablespoon sweet pickle relish 1/2 cup (71 g) sauerkraut 1/2 cup corned beef 5. Reduce speed to Variable 5 and remove lid plug. 6. Drop in cheese through the lid plug opening. 7. Blend for 1 minute. Remove lid plug and add caraway seeds, dressing, relish, sauerkraut and corned beef. 8. Blend an additional 10 seconds, or until beef is just chopped. If necessary, use the tamper to press any ingredients into the blades while processing. Serve immediately. Garnish: Rye croutons More Healthy Spud News!
