Almond butter experiment that I had to share

I just made my first almond butter from the recipe below (Vitamix website).

However, I can't do anything the way the recipe says. I had a 10oz. jar of

cinnamon toasted (roasted) almonds and a 6 oz. can of Blue Diamond Bold Wasabi &

Soy sauce almonds. So I mixed those together. Used the 1/2 cup of oil from the

recipe but probably should have used a bit less. Never the less, turned out

delicious, and am refrigerating to see if I can get some oil off the top.

Surprising, the sweet flavor has overtaken the hot/salty flavor. Anyway, was

nervous about overheating the motor but that was no problem and cleaned out with

almond milk and ice for an almond milk frappachino.

3 cups (440 g) unsalted roasted peanuts

1. Pour nuts into the Vitamix container and secure lid.

2. Select Variable 1.

3. Turn machine on and slowly increase speed to Variable 10, then to High, using

the tamper to push the ingredients into the blades.

4. In 1 minute you will hear a high pitched chugging sound. Once the butter

begins to flow freely through the blades the motor sound will change from a high

pitch to a low laboring sound. Stop machine.

5. Store in an airtight container. It can also be frozen for longer storage.

CAUTION:

Over processing will cause serious overheating to your machine! Do not process

for more than 1 minute after mixture starts circulating freely.

Variation: Cashew Butter

Substitute dry roasted cashews. If using dry roasted nuts, you may need to add

oil. Begin with 3 tablespoons and add more if necessary.

Variation: Almond Butter

Substitute dry roasted whole almonds. Add 1/2 cup (120 ml) of light-flavored oil

during the blending process. Refrigerate and pour off excess oil the next day.

Health Classification: Diabetic Friendly, Low Carb, Low Sodium, Low Cholesterol,

Gluten-Free, Vegetarian, Vegan, Raw

Meal Type: Dips and Spreads, 5 Ingredients or less, Appetizers, Sauces

This was even better on Day 2. I may have found a new guilty pleasure

I tried this again with less oil. The machine overheated. I wasn't worrried,

just stopped it and waited. However, used just one bag of regular salted

almonds instead of my wasabi ones and it is okay, but not as good as first

batch. However, when I cleaned out the machine ended up with more of an almond

ice cream but it was too late at night so I stuck it in the fridge and added it

to this morning's smoothie. I like the almond taste. I might just have to add

a scoop of almond butter into some of my smoothies, especially the ones with

pineapple. I would say my smoothie creations now border on obsession. Too bad

I don't measure and they never turn out the same way twice.

Okay, for me it is all about experimentation. Had finally finished my last nut

butter and could finally make something new.

First buzzed 1 package of whole cashews and sea salt (10 oz.) from Aldi's and a

handful of butterscotch morsels (instead of my usual white chocolate) and a

liberal sprinkle of cinnamon.

After that was all tampered and mixed, stopped machine and added in a can of

Blue Diamond Bold Wasabi and Soy Saue Almonds and tampered that until smooth.

Maybe I am strange, but loved the outcome.
