Guest guest Posted October 6, 2011 Report Share Posted October 6, 2011 Broccoli Rabe, Beans & Penne 1 bunch Broccoli Rabe (Or another veggie that you love. A friend used Spinach) 4 cloves minced garlic 1 can College Inn Chicken Broth 1 can Cannellini Beans Wash & dice your veggie. Set aside. Add a fair amount of Olive Oil to a large frying pan or stock pot. Enough to about cover the bottom of the pan. Add minced garlic. Add 1 can College Inn Chicken Broth. Drain juice from Cannellini Beans into broth. Set Beans aside. Add 2 cups RAW Penne Pasta to the broth. Bring up to a low simmer. Add chopped Broccoli Rabe on top of pasta. Cover & simmer until pasta is almost done to your liking. If you need more liquid to get it to your liking, add a small amount at a time. When the pasta is just about done, add the Cannellini Beans to the pan & toss. Continue cooking just to heat the beans through. NOTE: Use your imagination. Substitute different veggies & beans. The pasta will absorb the flavor of the veggie that you use. You could even use a combination I’m sure. Or substitute the flavor of broth as well.
