I really never think about amounts too much, so it is hard for me to gauge a recipe, and I grow ALL of my own stuff, so I don't know how it corresponds to a frozen/dried/canned or packaged version, but I will guess at it for you. I would think around 2 cups of beans, well drained. For two cups (which will give you about 2 patties), I would pre chop one stalk of celery, two scallions, and maybe a small carrot, one large mushroom. I would then add the two cups of beans, my egg sub (equiv to 1 egg-about 1/3 cup flax gel) and probably two to three tablespoons of my gluten free flour blend. I tend to go more by consistency than measurements. I would then add an additional 1/2 cup or so of cooked beans and just hand stir those in for texture. I will likely make these later in the week-happy to make a video for you, if you like.
