Storing soups

Just wanted to get opinions on how long you think soup could last stored in a

mason jar in the fridge. Last weekend I made 2 soups, a broccoli cheese and

the harvest apple cheddar from the Vitamix recipe book. Turned out great, I

stored them both in mason jars in the fridge but before I knew it, the week had

passed and there was still plenty of soup left (the harvest cheddar one). I

wish I had put some in the freezer but now it seems too late? Is there a rule

of thumb for how long to keep soup in the fridge? Just curious, thanks!
