Hello Anne,I'm sorry that I don't bake and this is cheating, but I did Google, "Gluten Free Oatmeal Muffins"http://www.google.com/search?client=safari & rls=en & q=gluten+free+oatmeal+muffins & ie=UTF-8 & oe=UTF-8I know that isn't much help, but hopefully you'll finds something in there :-)Also, there is a recipe on our links page called "Aloha Muffins" (or Aloha Cake - I can't remember) which was given to me by a well known caterer and she uses the Vitamix to make the fruit base for the cake/muffins.

Shalom Anne, Congratulations on your new blessing to be birthed in November.  This is one of our family favorites that I came up with more than 20 years ago and have been making at least once a week since. I've made it all sorts of ways, with all sorts of variations. I have used all sorts of liquids - almond milk, dairy milk, soy milk (when we used soy), even no milk, I've used juices as the liquid. I've changed sweeteners, changed amounts. I've used all sorts of fresh fruits and dried fruits, whatever we have on hand. I've used eggs and I've used natural egg replacers (I like flax seeds). They all work well.I've made it in 9-inch pans and 9 x 13 pans. It freezes beautifully too.

I made a 9 x 13 pan yesterday, using local organic blueberries and organic almond extract and using my homemade almond-chia milk. I hope your family likes this as much as mine does! We eat it for breakfast and also as a snack.
